Monaco's First Michelin-Starred Vegan Restaurant Opens in Monte Carlo

Chef Léa Moreau brings plant-based fine dining to the Principality with her new restaurant, "Racines."

MONACO — October 30, 2026 — Monaco's culinary scene has gained a new landmark with the opening of "Racines," the Principality's first fully vegan restaurant to receive a Michelin star. Located in the heart of Monte Carlo, Racines is the vision of Chef Léa Moreau, a rising star in the European plant-based gastronomy movement. The restaurant offers a seven-course seasonal tasting menu that showcases locally sourced Mediterranean vegetables, herbs, and innovative fermentation techniques. "The goal is to show that vegan cuisine can be just as refined, complex, and memorable as traditional fine dining," said Chef Moreau. "Monaco is ready for this evolution." The restaurant's wine list features organic and biodynamic labels from small producers in France and Italy. Reservations are already booked out for the next three months.
